Big, luscious, dark-purple fruits make Black Beauty Eggplant a longstanding heirloom favorite. Approximately 80 days to maturity from outdoor transplant date-- grow in a greenhouse or grow outdoors if your frost-free season is at least 3 months long. The fruit is mild with no bitterness and can be eaten in myriad ways such as baba ganoush, eggplant parmesan and roasted eggplant. 5-6" long, plump fruits.
Planting Instructions: Start Black Beauty Eggplant seeds indoors 4 weeks before last spring frost. Transplant outdoors 2' apart after all danger of frost has passed and soil has warmed a bit. Keep soil moist during the hottest part of the summer.
Seed Saving Instructions: Remove seeds from the tastiest, fully mature fruit. Or use a blender with a very low setting-- place fruits with plenty of water and slowly blend. Strain out seeds. Dry seeds on a screen or cloth. Store seeds in a paper or mesh bag in a cool, dark and dry location.
