An Italian heirloom prized for its early maturing fruits and reliable production. Black Beauty Eggplant produces beautiful shiny, dark purple-black, 8" long fruits in less than 80 days, making it ideal for short-season growers! Ideal growing conditions produce 8-12 eggplants per plant. The fruit is mild with no bitterness and can be eaten in myriad ways such as baba ganoush, eggplant parmesan and roasted eggplant.
Planting Instructions: Start Black Beauty Eggplant seeds indoors 4 weeks before last spring frost. Transplant outdoors 2' apart after all danger of frost has passed and soil has warmed a bit. Keep soil moist during the hottest part of the summer. Make sure to harvest all of your eggplants before the fall frost.
Seed Saving Instructions: Remove Black Beauty Eggplant seeds from the tastiest, fully mature fruit. Or use a blender with a very low setting-- place fruits with plenty of water and slowly blend. Strain out seeds. Dry seeds on a screen or cloth. Store seeds in a paper or mesh bag in a cool, dark and dry location.
